Make Ahead Sausage Breakfast Casserole

This delicious and hearty casserole is filled with eggs, cheddar cheese, breakfast sausage, peppers, onions and hash browns, making it an ideal one-pan breakfast. Assemble the casserole up to a day in advance and all you'll have to do is pop it into the oven for a delicious breakfast!

  • 1 lb breakfast sausage
  • 12 large Eggs
  • 1/2 cup milk
  • 2 cups frozen hashbrowns Can substitute tater tots
  • 1 cup shredded cheddar cheese
  • 1 bell pepper chopped
  • 1 small onion chopped
  • salt to taste
  • pepper to taste
  • 1/4 shredded cheese to top the casserole optional


  1. Preheat oven to 350 degrees. Grease a 9X13 inch baking pan.

  2. In a small skillet, brown the breakfast sausage until it crumbles. Set aside.

  3. In a bowl whisk together eggs and milk. Season with salt and pepper to taste.

  4. Add the eggs, cooked sausage, cheese, pepper, onion and frozen hash browns to the baking pan. Stir to distribute ingredients evenly.

  5. If desired, sprinkle an additional 1/4 cup of shredded cheddar cheese on top.

  6. If cooking immediately, place uncovered in the oven at 350 degrees for 30-40 minutes, until the edges begin to brown and the egg is cooked through in the center. 

  7. If making ahead, cover tightly and refrigerate up to 24 hours. Remove cover before baking. 

Recipe Notes

This casserole can be made the day before and stored in the refrigerator until ready to bake.

Store leftovers promptly in the refrigerator and reheat in the microwave for quick weekday breakfasts!
