
A few years ago my grandmother was visiting over the Christmas holiday and brought along with her a french toast casserole. She suggested we use it on Christmas morning so that we would be able to spend more time with the kids and less time in the kitchen preparing food.
I’ll admit, I was a little skeptical at first, but the idea was alluring – especially because we make big holiday dinners and spend enough time in the kitchen as it is! Popping that casserole into the oven and then sitting down to sip coffee and spend time with my family was amazing!

I’ve been a fan of make-ahead breakfasts ever since. This Sausage Breakfast Casserole is a savory, hearty treat filled with breakfast favorites – fluffy eggs, crumbled sausage, cheddar cheese, potatoes, onions and peppers – it’s a one-stop breakfast in a pan!
Whisking the eggs with milk makes them extra fluffy, so don’t skip that step!

This recipe is really versatile as well – swap out the cheddar for your favorite cheese to switch it up, top with fresh scallions or tomatoes or use tater tots instead of hash browns. Although I love this sausage breakfast casserole exactly as it is, it’s easy to change things up for a fresh flavor!
One of my favorite ways to serve this is on warm fajitas. We top the casserole with salsa, sour cream, cilantro and a little hot sauce, then roll up the fajita for a morning treat with a kick.

Of course, you can’t go wrong with some toast and a tall glass of orange juice either!
If you’re making this sausage breakfast casserole ahead of time simply cover it well and stick it in the fridge for up to 24 hours. When it’s time to eat just uncover the casserole and pop it into the oven. You’ll have a hot, delicious breakfast in no time!

Leftovers are delicious too, simply reheat in the oven or microwave.

Make Ahead Sausage Breakfast Casserole
This delicious and hearty casserole is filled with eggs, cheddar cheese, breakfast sausage, peppers, onions and hash browns, making it an ideal one-pan breakfast. Assemble the casserole up to a day in advance and all you’ll have to do is pop it into the oven for a delicious breakfast!
Ingredients
- 1 lb breakfast sausage
- 12 large Eggs
- 1/2 cup milk
- 2 cups frozen hashbrowns Can substitute tater tots
- 1 cup shredded cheddar cheese
- 1 bell pepper chopped
- 1 small onion chopped
- salt to taste
- pepper to taste
- 1/4 shredded cheese to top the casserole optional
Instructions

Preheat oven to 350 degrees. Grease a 9X13 inch baking pan.

In a small skillet, brown the breakfast sausage until it crumbles. Set aside.

In a bowl whisk together eggs and milk. Season with salt and pepper to taste.

Add the eggs, cooked sausage, cheese, pepper, onion and frozen hash browns to the baking pan. Stir to distribute ingredients evenly.

If desired, sprinkle an additional 1/4 cup of shredded cheddar cheese on top.

If cooking immediately, place uncovered in the oven at 350 degrees for 30-40 minutes, until the edges begin to brown and the egg is cooked through in the center.

If making ahead, cover tightly and refrigerate up to 24 hours. Remove cover before baking.
Recipe Notes
This casserole can be made the day before and stored in the refrigerator until ready to bake.
Store leftovers promptly in the refrigerator and reheat in the microwave for quick weekday breakfasts!
