We grill a lot over the summer, spending most of our fair weather Saturdays crowded around the patio with family and friends. This grilled watermelon with feta cheese and balsamic vinegar is one of my go to snacks for summer entertaining. The watermelon is grilled just long enough to begin to carmelize, intensifying the sweet flavor of the fruit. Paired with creamy feta cheese and the tangy taste of balsamic vinegar this is a perfect treat for a summer get together!
As much as we love sweets, a day of ribs, potato salad and cornbread sometimes calls for a dessert that a little on the lighter side. This warm watermelon is just as refreshing as the chilled cubes in a fruit salad, yet it feels just a teensy bit more grown up. I serve it with fresh basil when I can, because I love the taste of basil and watermelon. Mint would also be delicious!
It comes together so easily – just slice the watermelon ahead of time and toss it on the grill for just 1-2 minutes per side, then transfer the watermelon to a plate, sprinkle with feta cheese and drizzle balsamic vinegar over the top. Serve warm, preferably with a cold glass of sangria!


- Watermelon, sliced
- Feta Cheese
- Balsamic Vinaigrette
- Grill watermelon slice about 1-2 minutes per side.
- Transfer to a plate and sprinkle with Feta Cheese.
- Drizzle Balsamic Vinegar over the watermelon and serve warm.
- Garnish with fresh basil or mint if desired.
