Anyone who reads this blog on a semi-regular basis knows I adore pumpkin. Not the processed pumpkin spice flavor they put in everything from M&Ms to coffee this time of year, but real, fresh pumpkin. I love the slightly nutty flavor and the way it mingles with the scent of nutmeg and brown sugar to make my entire house smell just like Thanksgiving day. I love picking pumpkins, carving them, decorating with them but most of all, I just really love to eat them. Naturally I have quite the collection of pumpkin recipes.
So I decided to put together a little bit of a personal pumpkin roundup – a collection of my favorite recipes from my own cookbook. These are fall staples in my house (and, depending on how much pumpkin I freeze, maybe even winter, spring and summer staples too). These are my very favorite – from rustic soups to sweet syrups, there’s a little something for everyone.
Pumpkin Spice Latte & Coffee Syrup – Let’s be honest. Not many people can avoid the call of a PSL. It’s like a Fall right of passage these days and I’m not immune to it. A few years ago I decided to play around with a recipe for my own pumpkin spice syrup. It wound up being delicious, and now I enjoy pumpkin spice lattes whenever I like – I don’t even have to get out of my pajamas.
Maple Roasted Pumpkins – This recipe is delicious and fun. It transforms inexpensive and easy to find mini pumpkins into a sweet side that’s fun to make and to eat!
Rustic Pumpkin Soup – This creamy yet simple soup calls for only four ingredients, but is so delicious no one will ever guess it was quite so easy to make!
Roasted Pumpkin Slices – A delicious fall side, this is about as easy as roasting a pumpkin gets!
