As the warm weather (and tomato season) is nearing an end, I want to share one of my favorite quick and easy summer time recipes. This five minute tomato basil salad is a refreshing summer side dish and since it comes together so quickly it can be easily served to surprise guests. It holds up well in warm weather making it an easy dish to bring along to a barbecue as well!
I start with two pints of cherry tomatoes, Halve or quarter the tomatoes (depending on how large they are).
In a bowl combine the tomatoes with:
- 1 Tablespoon Extra Virgin Olive Oil
- 1-2 cloves chopped garlic
- a splash of balsamic vinaigrette
- 1 Tablespoon fresh basil, chopped
- salt and pepper, to taste
Mix ingredients well and you’re done! If you have the time allow the salad to sit in the refrigerator for 30 minutes or so. The garlic and basil flavors really intensify while it sits! I’ve even made the tomato basil salad a day in advance. As long as you keep it refrigerated it keeps really well.
Tomato season is at it’s very end here in NY, so I’ll enjoy this while I can. If you can get your hands on heriloom tomatoes, the different colors make this a great looking dish and the recipe can easily be adapted for larger groups!
