I never really put much thought into grapefruit recipes. I mean, it’s a grapefruit – you halve it and eat it, maybe with a little sugar sprinkled on top. Then I ordered over 20 lbs of grapefruit from a school fundraiser and suddenly found myself wishing for a stockpile of interesting grapefruit recipes. I really love grapefruit, especially on a summer morning when the cool, citrusy fruit helps me to feel refreshed, and I wanted that same good to wake up to morning feeling, but with a winter spin on it. I have to admit, I love thyme on just about anything and I recently discovered how delicious thyme is when paired with tart fruits, like apples and cranberries, so as I started thinking about grapefruit recipes thyme was the first ingredient on my kitchen counter.
This recipe is so simple, perfect for a morning breakfast when you’re in a hurry but still want something that feels good and hearty to eat. Have this on the side of some oatmeal for a breakfast that will keep you full all morning long.
Simply halve a grapefruit and place it on a baking tray. Drizzle with honey and sprinkle with sugar, then sprinkle some thyme over each piece and place under the broiler for 5-10 minutes, just until you begin to see the fruit take on a darker pink shade.
